For our sweet sparking we select and harvest parcels early to produce a wine of freshness and vibrancy with lower alcohol. After the second fermentation the wine is removed of lees to keep the fruit characters and is given a greater sugar dosage to produce a sweeter wine that is balanced by the fresh acid crispness. The wine is a brilliant pale straw colour with a fine bead, and creamy mousse on the nose. It displays intense rose petals musk and passionfruit. The palate is light, soft and sweet. It displays all the fruit characters of the nose in a sweet creamy texture that finishes with a clean fresh crispness. Enjoy with fresh fruit platters.
